Brisket time

havent posted in a while, but got a good looking brisky coming along so I figured I'd share. Few more hours and we'll be feasting. I just wrapped her in butcher paper to expedite the process a little.

    Whatever you do, "don't cave to the we want it now" demands.  Give the cow as much FTC as you can-now You will reap the majority of the n=benenfit if you can get past 60-90 mins but 120-150 mins will only help it.  (Not necessarily you or those waiting for the groceries.)  Best of luck- and only slice across the grain on demand.  Enjoy!

    Yeah I know. I set dinner for 1930...put this thing on at 0300. Might have not allowed enough time. I can't push dinner back too far, but I can spare 30-45 minutes--granted it's done at 730-8...

    We ended up eating around 9, but damn it was good!! She had a sexy jiggle and I did not let it rest. From grill to plate, but slicing on demand makes it hard to get pictures. I was able to snap one of the leftovers that will be going in chili.

    Is this the RD Superior Angus we were texting about?  Looks like a good brisky brudda!  I might swing by RD this week. I come off of my "On Call" week tomorrow AM. Looks damn good Brian!
