ive been gone a while, has anyone figured out how to cook a brisket, other than those in Texas with cheater meat??

asked this one in another thread with no response, anyone not trim? If so, how were the results?

The quality of meat going in gives you a little more flexibility on hitting the finish-line. The process is generally the same and every so often you can nail it with the lower grade cuts but it takes more attention and likely a lower cook temp. FWIW-
And regarding the above trim question- I would always trim the hard fat as it will not completely render and you likely won't enjoy the savory goodness of the cook results.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
I have never used SRF, can't afford it even on sale, but do use Prime or Choice which ever is available and have good luck with both. Don't see how using a better cut of meat as cheating, but more wanting to have a better finished product in the end.
As for trimming I had cooked one before without trimming and it was ok, but like what @lousubcap said the hard fat needs to bet cut out. It won't render and by cutting it out it make the cook go better.
I not tried @travisstrick method, but have thought of doing Dr BBQ's coffee recipe on the BGE website sometime.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo. -

I've had untrimmed brisket before. Way too much fat. I always trim mine to about 1/8" fat. I read an article that said trimming the cap isn't really considered trimming since it's a requirement. @Toxarch - that's one of the finer looking Costco primes I have seen. Got a good one right there.
I'm not trying to sell SRF briskets but I truly enjoy that cook and eats for special occasions.
