Hole in Vacuum sealed beef ribs

Hey guys and gals, quick question. I had put some beef ribs in the fridge to thaw out Sunday, and noticed today after inspecting that there was a small hole at the point of a bone in the bag. Is this a problem for the meat? I think it will be fine, just wanted to check with y'all. Thanks!

All the nutrients probably leaked out that hole, but I'm confident that if it was refrigerated in the safe range (below 40F) you won't have any pathogen issues unless they were there to start with.

They will be safe for sure. And most likely you will never know there was a hole in the bag. Let's see the final product once cooked. Good eats awaits.Snellville, GA

Ok good deal. It didn't leak out until I picked it up and messed with it. I am planning on putting them on tomorrow, so will post pics for sure. My last ones were terrible, so hopefully these will be betterLBGE

Grab the nutrients that leaked into the fridge and pour them on top prior to cooking. Problem solved.

I double wrap all of my bone in meats in plastic wrap before I vac pac them. A couple of fork holes here and there , and it seals great . ( for me )More meat please !! :-)

Where's the obligatory "when in doubt toss it out" guy ? I have a buddy who duct taped his freezer door shut before the Matthew so minimal cooling/leakage around gasket would occur. Hundreds of freshly processed beef. And most of it survived even after a significant power loss. And that's with them being wrapped in butchers paper with masking tape labels.
But, that hole in the cryopak or food saver bag is a deal breaker.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL -
The best part was that they didn't leak out until picked up.Little Steven said:

I had the same issue with some beef ribs. I purchased them frozen and noticed some blood leaking from one of the bags after thawing. I split them up in 4 food saver bags, removed the air and cooked them Sous vide style for three days. I cut one open one bag to test flavor and it was excellent. I let the other bags cook awhile longer and when I cut one of the other bags open the smell was horrendous. I've never smelled a dead body but I'm pretty sure that was close. It took a long time to get that smell out of my kitchen and I was in the doghouse for sure

Could've just as easily been a White Castle or...Look at all the fucks I give. Point being I believe food prep and handling are important but, ambulance chasing blood sucking attorneys and scumbag people have taken it to a very dark place. I'm almost 100% I've suffered some food poisoning at some point. Fun fact.... You're more likely to get extremely sick from out of temp salad than you are from out of temperature beef. Another fun thing... With the work I do unfortunately I have even further narrowed the restaurants I'll dine.Little Steven said:There was that Jack in the box thing a few years back.

So you're saying we can eliminate these vampire threats by feeding them out of temp salad. Brilliant! I'll give you a list of restaurants that I wouldn't send my worst enemy. Anonymously recommend these to the vampires. The rest should sort itself out naturally.
But, a yoga vegan here? That's like a porn star at a Bible Camp.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL
