Made some bacon. Sliced it up tonight.

salt, brown sugar, thyme, pepper and garlic. To half of it, I added a healthy 1/2 cup of maple syrup for a sweeter option. Came out great. After all, I had to cook some as I was slicing!

Here red is just 1/8 of it sliced:

I have have yet to smoke any I have ever made. Not sure why.... Fear of the unknown maybe?
What is in your favorite recipie?

That looks great! I can almost smell it.
I need to do it again soon. On my last batch I added the maple like you did but I also pulsed up a couple jalapenos in the food processor and added that to the cure mix. It gave a nice subtle flavor to that bacon.North Pittsburgh, PA

@Killit_and_Grillit, I have the advantco 10". Got it at the Resturant store. It was ~300 if I remember. Comes with sharpener and all. My only complaint is that the throw is just a little short. Certainly not a deal breaker. It is no Hobart, but I can carry this in one hand, hide it under a corner table, and it has done everything I asked for it to do.--------------------------------------------------
