4 butt cook starting soon!

So i volunteered to cook pulled pork for a visitation tomorrow, which means 4 butts. I have a large and the AR. How many hours do you guys think Im looking at for this thing to go at 250?

    Shouldnt take much longer than it would to do just one. Some people will rotate in the middle of the cook but not necessary. Just remember that they wont all finish at the same time so be ready to do some ftc.

    I would also recommend trying to finish them several hours before you need them so you arent rushed at the end. FTC is your friend on cooks like this.

  • I have to feed at 4pm tomorrow, so im shooting for an 11am finish. I reckon this will take about 16 to 18 hours, so butts on around 5pm today. 

    Sound good?

    What size are they and what temps are you cooking at? 16-18 hours is pretty long.

  • They are ranging from 9.5 to 11 pounds, big ones. Probably cook 230 to 250, a pretty high sugar content rub i have on here.

  • Rubbed and in the fridge, have been the last 5 hours. 


    Weber KC BBQ rub is whats on there, ive been very fond of it lately.

  • Ok so they are on, temp is holding at 255, then i pulled the thermo out because it was stabbing the meat. Did two levels on the AR. 

    First level, two butts over the oval stone and a drip pan. 


    Second level, two more butts on the raised grid on my AR.

    And the third picture, i got the damn thing closed without touching the meat in the lid!!! Had to pull the thermometer, ill go by experience/vent position.

  • I did three last weekend. The one on top finished hours before the ones on the bottom level. Be aware.

    We live a good distance from anyone else, they probably cant even smell it!

  • Hour 12 just passed, top butts are at 150 and bottom ones are 145. I think the temp went south overnight. 

    If i push the temp to 350 or so, will i make my 11AM ideal off the grill time?

    I'd bump to 350, it will push it through the stall.  May need to watch it a little closer so the outer top edges don't scorch?

  • I think it was a wicked stall, temps are back to 160 and climbing steadily now.

  • Just got into the 190s on all 4, looking for 198 then off. Looks like ill be right at 18 hours. 


    I need a new thermo, i think mine reads high, so my fire dies in the middle of the night or im not cooking anywhere near 250.

    Regarding your dome thermo, I would give it a cal check before giving up.  The tel-tru thermos are very solid instruments.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.  
  • Ive wrapped it around many times, and have calibrated it recently. This one is from 2009, im not sure its a tel tru, it has an egg on it.

    I believe 2009 was before BGE went with the tel-tru.  I get it as I have replaced a non-tel-tru as it was temperamental to say the least.  Just tossed it out for consideration-

    Thus far, with all of my longer cooks, this has been a real issue for me.  I am unable to control my intake levels at a pace that is adequate to the cooking time, thus blowing past my own personal stall point and becoming quite "done" prior to the meat being ready!  I find a way to survive, but this is two Sunday Funday's in a row that have made for some pretty serious Monday Bumday's!

    What's the little gizmo on the to of your AR to get you up a level?

    Also, did you rotate those butts during the cook or let 'em lie where they rested?
