Skins and Wings

We had some marginal bar food last night watching the UT/VA Tech game. So we tried to make up for it tonight. 

Smoked and direct raised potato skins with rosemary garlic bacon bits and honey chili wings courtesy of @lousubcap recipe today. (The wife approved) The store was out of the whole wings Friday so I had to settle with frozen. But that's the risk you run the day before game day in the south.

    @Eggdicted_Dawgfan I went indirect about 375 for 45-55 minutes after poking some holes in the potato with nothing on them and then pulled and let them cool 15 minutes. Then I sliced them in half and hollowed out with about 1/4 an inch of potato and skin left. I coated them in butter, salt and pepper on both sides and tossed them in the broiler skin side up for 3-4 minutes on each side. Then load them with cheese and bacon and tossed back on the egg at 400 raised direct until the cheese melted (if I wouldn't have been doing wings too I would have left the indirect plate in and just cranked the heat)

    about 1 1-2 hours total. Edit: I think the raised direct dried the cheese a little. They were perfectly crispy on the bottom and with the sour cream were really good. I may do some chili on top next time for game day.

    It had to be only apps. I had snacked on so much of your dang bacon recipe that another course might have caused cardiac arrest.

    Yesterday was brutal, the Ark game, the delay on Vandy and Ole Miss up through VA Tech nipping at UT I tile 11pm. At least Miss State stomped the crap out of the Gamecocks, that makes me feel better about Vandys loss last week.

  • Rough day. My hawgs put a hurting on me. I couldnt even go to sleep. Woke the baby up twice screaming from the living room. When we won I ran into the bedroom to see if wife saw it and she had a blank expression. I couldnt understand why she wasnt excited. Then I looked at the tv and she had it on the wrong damn station. Was watchig auburn and ark state and didnt even know the difference.
