Old School Direct/Indirect Rack

I (not Nichole @tarheelmatt) marinated this Aussie rack in S & P, garlic, herbes de Provence and white wine. Seared direct in the back of the egg where the lump was going and finished in the front away from the fire. Some green onion mashers, sperigus and a great Greek salad my much better half put together. Ok, I only watched...





Lamb was was slightly more cooked than I prefer but made for a delicious meal. 2 more ribs in me after the first four. Contemplating tomorrow's cook. Thanks for lookin'.

    @bgebrent- Great cook right there-love lamb racks-got one in the queue for Sunday.  How long in the marinade?
    BTW- @leemschu -  ask at the meat counter.  Fairly regular cut at Kroger here in bourbon country.  I'm sure they can get it as it exists in their supply chain.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Cap, 4 hours in.  Heavy on the garlic and liberal kosher salt for me.  Eat well brother and thanks!

    Thanks man!  Kroger has as Cap suggests.  At least here in the Atl.  I get mine from Costco.  Speak with the butcher.  He should be able to hook you up.

    Those mashed potatoes look really good and creamy too.  Homeade or boxed?

    Nothing wrong with boxed if so.  Those 4cheese mashed potatoes in the box are delicious (forgot the brand)

    @bgebrent -  I am right there with ya-and those tomahawk steaks and oversized turkey legs are just a bonus.  That said, if I truly get into the caveman post cook and true inhale routine then STFB.  Couch assignment for sure-duration a matter of presented debauchery.  ;)

    They're homemade gold potatoes with green onion and bacon.  I agree there is some good stuff in bags and boxes.  We're, as the title would suggest, old school.  If you haven't put your mashers through a ricer, give it a go.  Smoothest/creamiest ever brother.

    A diamond plate revelation - Heard they are readily available thru a broker rep from De Beers working the pits in South Africa.  I found one at the local flea market but can't expose it very often-limited survival life in the cold light of day  ;)

    Please do!  Nothing healthy about it.  Heavy cream or whole milk, unsalted butter, s & p, then fold in the cooked bacon and green onion.  Got no complaints.

    speaking of multi level cooking I cooked on a Kamado Joe last weekend.  That grate system is very nice. Very easy to switch from direct to raised direct, or have half at each level if you wanted.
