Turbo butts and the vents

I'm cranking out a couple 7.5# turbo butts this morning thanks to advice from @Mickey. I was just wondering about the vent settings. Do you slide the daisey wheel over and keep around 350 with the bottom vent or leave the daisy wheel in position and crank the bottom vent open? I'm thinking in terms of giving the meat the best smoke possible.

Take the daisy wheel off and control temps with bottom vent.

  • Large egg here.....  350 is DFMT (Daisy) open about 3/4 petal and the bottom open about 1/2 to 3/4 inch.  Just got a Smokewear cap, so I think it was open about 3/4 inch as well.

I don't ever use a daisey wheel. No  need and have 4 eggs

After a a couple cycles of sliding the daisey wheel off and working the bottom vent, I got it locked like Fort Knox at 350 with the bottom vent at hair less than half and an inch and daisy on and set to 100% open. Cruise control.

Doing two butts turbo right now.

Smokeware cap wide open.  Still on just fully open.

Bottom vent 7/8 of an inch.

First timer here as well.  Lots of low and slow butts under my belt.  All overnighter cooks.

Sounds about right. I don't know about yours but when I slowed down the airflow on top I was getting some nice flash thru the bottom vent and daisy wheel. Egg was getting ugly. Didn't like being restricted with all that fresh lump in the hopper.

I too like the idea of leaving the daisy wheel slid off, however every know and then I get a bird sitting on the stack of the egg checking out what's cooking. They don't stay too long though and as long as they don't drop any extra spices on the meat.
