cauliflower mash is really good

roasted some leeks for a while, then chopped them up and added to some steamed cauliflower with white cheddar, a little garlic and a Paula Deen-sized knob of butter.

asparagus wrapped in prosciutto and Mahi with some Asian seasoning blend.

I use an Immersion blender.. Just blend until you are happy with the consistency..
