Chicken parm on the egg

becoming a semi weekly tradition now since its low carb. 

First I dip chicken in egg and coat with coconut flakes. 
Pan fry for about a min per side 
Throw in egg at 400 on raised rack with drip tray on lower grate. (So sauce and cheese doesn't cause smoke)
Cook until about 145 then place sauce and cheese on until melted and hot.

Paired with broccoli and cauliflower mash

    Nope. I like coconut though. I honestly don't taste too much of it though.

    We will have to try that soon. Looks amazing! We go grain free too. We made some grain free chick-fila nuggets at home recently with chicken marinated in pickle juice, breaded in almond flour and arrow root and pan fried in coconut oil.

    I will definitely try your chicken parm soon. Thanks for sharing!
