Just some grilled Mahi and...something

If it were not more pricey I'd just call it Spatchcock Mahi because I'd be making it about as often as I do chicken.   Such a simple but delicious dish.  Rubbed with a little oil and dusted with DP Raging river.   Served with Cilantro-Lime basmati rice and mango-avocado salsa.



Next day had some left over rice and salsa so threw the rice on a plate, put some black beans on the rice, mango salsa on the beans, and topped with a fried egg.   Winner.
