Tri-Tip Lunch off The MiniMax

Decided to cook for the guys at work. Brought the MiniMax to the warehouse and set it up for direct grilling at 500. Seared the tri-tip for about 4 minutes per side then dialed the MM down to 350 with the plate setter and let the meat cook to 130 degrees internal temp. Grilled some asparagus and little peppers while the meat rested. Picked up some garlic bread and Shiner Bock borracho beans from our local H-E-B in Houston Texas. All done in about an hour and we definitely had some happy folks around here. Can't wait to try it again.
