Here is a recipe posted by Salmon a while back. If have tried it and it was a hit. Served it with garlic crostinni.

I obtained this from
a cookbook called Sticks & Stones by Ted Reader and Kathleen Sloan.[p]1 maple plank, soaked ( I used cedar)
2 small wheels brie (1/4 pound each.)
2 heads garlic, seperated and peeled
1/2 cup plus 2 tbsp olive oil
2 green onions finely chopped
1 red bell pepper, roasted, peeled, seeded and finely chopped
2 tbsp chopped fresh thyme
2 tbsp balsamic vinegar
2 tsp coarsely ground black pepper.[p]Preheat grill to high.
With a sharp knife, scrape rind off of the top of each wheel of brie to expose cheese, Set aside.
Heat 1/2 cup oil in a small saute' pan and add whole cloves if garlic. Reduce heat to medium and
simmer garlic in oil until softened and beginning to color, about 20 minutes. Remove from heat
and, using a slotted spoon, transfer garlic to small bowl to cool. Reserve garlic flavored oil
for anothe use. Mash garlic cloves using the back of a fork. (I skip all that non-sense and just
toss in a teaspoon or two of store bought minced garlic in a jar). Add green onions, red pepper,
thyme, balsamic vinegar, 2 tbsp olive oil and black pepper. Season with salt to taste, Spread
garlic and pepper mixture over tops of of brie wheels (I heat the mixture on the stove first).
Place soaked plank on grill, close lid and bake for 10 minutes or until it begins to crackle
and smoke. Being careful of smoke, openlid and place cheeses on plank. Close lid and plank-bake
for 10 to 12 minutes until cheese begins to melt and bubble. Remove planked cheese from grill.
Serve with slices of crusty bread, flat bread, or crudite's, (I kinda like Ritz crackers myself).[p]Rick

Maple-Planked Brie with Garlic and Roasted Peppers[p]1 maple plank, soaked (at least 4 hours)
2 small wheels brie (1/4 lb. each)
¼ cup olive oil
6-8 cloves of garlic, chopped
2 green onions, finely chopped
1 red bell pepper , roasted, peeled, seeded and finely chopped
2 tbsp. chopped fresh thyme
2 tbsp. balsamic vinegar
black pepper & salt to taste[p]Preheat EGG to 400 degrees dome. Scrape rind off top of each wheel of brie to expose cheese and set aside.
Heat olive oil in saute pan (or cast iron skillet) and add garlic, cooking until softened but not browned. Add green onions, peppers, thyme, vinegar and saute for 5 minutes, stirring occasionally. Remove from heat and salt & pepper to taste.
Place the maple plank on direct grill and listen for it to “pop” (about 8-10 minutes). Divide the pepper mixture evenly on top of brie wheels and place on plank.
Close lid and bake for 8-10 minutes,or just until cheese begins to melt at it's edges... (or the plank catches fire, as in Chubby’s case!!). [p]Serve with slices of crusty bread or crudites.[p]

holy crizzap. that looks/sounds good...[p]if you cut it in half, would that be ok? ...rather than scraping the top off. [p]a tip. you can cut brie (chilled and firmed up a bit inna fridge) with dental floss (waxed or unwaxed, but NOT flavored). loop it around and pull, and it slices right thru. you can get four slices out of a typical wheel. layer it with smoked salmon and dill, and press it back together wrapped up in its container, under the weight of a plate.[p][p][p]

Salmon,[p]I saw this guy on a outdoors show a couple years back...it very well might'a been him!![p]I jotted down as fast as I could write....but was never sure I got it all...or all right, for that matter.[p]It sure looks similar from here though.[p]I do a good amount of plank cooking...and my wife loves Brie....so?[p]Hope you're well....thanks for the recipe!![p]Evans[p]Evans[p]
