Blackened Swai on the Mini

Dont know dome temp cause I never closed it.  CI on for 15 or so mins then 2tbls of butter then fish


Plated up with some tomatoes and okra with some hot sauce

  • Swai is a Vietnamese farm raised catfish.    We use it for our lent fish fryd since it is so inexpensive.

    Wow, that looks great. Excellent plating. That side dish is a winner too. I think there would only be two ways to improve that...1-Serve the whole thing on a big ole serving of extra buttery cheese grits, and 2-no, no need for 2.

    you put the butter IN the pan?  I usually dip fillets in melted butter, add seasoning then onto the pan.  After a long day of fishing and drinking, I had to do it indoors.  Got skillet white hot and had several fans set up to deal with the smoke.  I confused my recipe and threw butter into the skillet.  Bad, bad, bad idea.  Instant inferno, inside kitchen.

    I did say long day of drinking...

    Prolly just a difference in CI temps, but I didn't have an inferno. Just nice crusty fish.

    I rolled into krogers looking for white fish and that was all they had.  Origin- didn't know till it was posted above.  Pretty good fish for taking on flavors.  Need to research it a bit before buying again.

    I absolutely love blackened fish and find it to be very healthy.  But Swai? No way man.  There are so many better options.  You did indeed make the best of it though.

  • I was in Orange Beach on vacation this summer and went to a popular local tourist restaurant. Ordered the platter thinking I'd get all fresh local seafood. Took one bite of the fish and immediately stated it was some Asian farm fish. When I asked I was told it was swai. I have cooked it a few times because it's cheap and immediately knew it. I was mad and never went back. The meal above looks great but I really wanted fresh gulf fish. I almost always ask what kind of fish they serve and won't make that mistake again. Not a hit on the meal above, just my lack of fresh gulf restaurant fish. The meal here looks great.

    Damn it. Wish I looked into it a bit before I ate it. This fish is as bad as farm raised Talapia.  Tasted good but ain't gonna happen again.

    Sorry didn't mean to poke the bear. I figured you didn't know. It's a fish I would never pay money for. Especially when I have so many choices of fresh fish and seafood available caught locally. When these choices become limited you'll see more of the farm raised China Tilapia and this one. Now to be clear Matt this meal looks spot on as always.
