Impromptu Breakfast Casserole
I was the only person up this morning, and seeing everyone else's egged breakfasts, I decided to do one, too.
This was my inspiration:

Heavy modifications based on ingredients I wanted to use up & to make it kind of Tex-Mex. Husband said it was "really good," and that I should write down the recipe. He had two helpings, although I had to remind him that the fruit wasn't a garnish.
