    Morning Car Wash Mike:[p]Here is one that my much better half came up with that we did at the Florida EggFest in March.[p]P3110031.jpg[p]
    EggHatter's Almond-Chocolate Dream Roll [p]Ingredients:
    1 -- 1# loaf frozen bread dough, thawed
    1 cup almonds, chopped
    1 cup semi-sweet chocolate chips
    1/2 cup brown sugar
    1/4 cup softened butter [p]Glaze
    Mix together 2 cups powdered sugar with 1 to 2 tablespoons milk and 1 tablespoon Hershey chocolate syrup. [p]
    Preparation/cook:
    In a food processor, with a standard utility blade, chop almonds and chocolate chips until finely ground. Using hand mixer, add in sugar and butter until chocolate mixture is a paste. Set aside. Roll thawed dough into a approx. 12" x 15" rectangle. Spread chocolate mixture on dough. Roll dough with mixture inside like a jelly roll and drop into a greased (Pam spray works also) bundt pan. Let rise in warm area until puffy (about 1 hour). [p]Egg setup is with platesetter (feet down) at about 375 dome temp. Place bundt pan on platesetter and cook until top is golden brown (usually about 20 to 25 minutes). Invert bundt pan onto cutting surface and then drizzle glaze on roll. Slice and enjoy.     Car Wash Mike,[p]Buy Scharffen Berger Dark Chocolate. Place it indirect in a small pan on the egg at about 250 for about 30 minutes. This should melt it down pretty well.[p]Then take your favorite fruit: Pineapples, Bananas, or my favorite strawberries and dip in into the pan to coat as much or as little as you might like. The either eat them fondue style or refrigerate for about 30 minutes.[p]With a nice little Port or Cabernet, it is phenomenal.[p]On the egg the chocolate gets just a hint of smokiness which is excellent with the fruit. You can also grill the fruit a bit prior to dipping if you would like

    cozy fire, fresh berries with just a hint of fresh ground black pepper, nice pinot noir, and a couple of dark chocolate bars broken into bite sized pieces should make you hit a home run.
    Also, do a google search on chocolate flourless cake, there are hundreds of variations.[p]Kiss the Angel for me !!!

    Recipe Summary
    Prep Time: 10 minutes Cook Time: 45 minutes
    Inactive Prep Time: 30 minutes Yield: 6 servings

    6 tablespoons unsalted butter, plus more or greasing the pan
    1 1/4 cups granulated sugar
    6 large eggs, separated
    5 tablespoons instant espresso
    6 tablespoons Dutch-processed cocoa powder (recommended: Droste)
    6 tablespoons dark rum or Marsala
    1 1/2 cups ground, toasted, blanched almonds
    All-purpose flour, for coating the pan
    Confectioners' sugar, for dusting


    Melt the butter in a glass bowl over simmering water. Once the butter melts, whisk in the sugar and the egg yolks, and cook for 5 minutes, stirring constantly so that the eggs become ribbon-like and light in color (don't scramble.) Whisk in the coffee, cocoa powder, rum and almonds, and continue cooking, stirring constantly, until the mixture becomes smooth and creamy.
    Transfer the cake mixture to a mixing bowl and set aside.

    Preheat the oven to 375 degrees F.

    Butter and flour a 9-inch round cake pan.
    In a clean, separate mixing bowl, beat the egg whites until the just begin to stiffen and hold soft peaks. Be sure to stop before they form hard peaks. Gently fold the whites into the chocolate mixture. Pour the batter into the prepared pan and bake until firm and beginning to separate from the sides, about 30 minutes. Remove from the oven and allow to cool 30 minutes more. Flip cake over, dust with confectioners' sugar and cut into wedges before serving.

    simplest, moisted, tastiest chocolate cake
    1.5 CUP flour
    1 teasp baking soda
    1 teasp salt
    1 CUP sugar
    1/3 CUP cocoa powder
    1/3 CUP oil
    1 teasp vinegar
    2 teasp vanilla
    1 CUP water
    mix dry ingredients first, then add wet ingredients @ different spots on the dry blend
    mix well & bake in a 8"x8"x2" greased pan @ 350°F for 30min
    allow to cool 15 min & then remove
