Bruschetta Chicken

After some inspiration from this forum, I decided to branch out a little bit. Had a bunch of cherry tomatoes that needed using. So I made a marinade of EVOO, Red Wine Vinegar, Balsamic Vinegar, Italian seasoning and red chili flakes. Pounded out a package of chicken breasts and marinaded for most of today. I made a bruschetta topping for the chicken consisting of tomatoes, garlic, red onion, basil, EVOO & S&P. 
Grilled chicken raised direct for about 20 minutes. Served with a caprese salad. Awesome meal.
Finished the meal off with a whiskey that I haven't seen before. Love the main brand. This stuff was excellent too.

    Bravo sir!  That's a great idea to use up maters.  I've done something similar a couple times this year.  I made caprese chicken.  Marinated the chicken and then grilled them.  The last 5 minutes or so of grilling I top the chicken with a slice or two of roma tomatoes and top that with fresh mozz.  Let the mozz melt down and brown up a little bit.  Serve with balsamic glaze.

    @saluki2007 I tried a caprese stuffed chicken breast a few years ago in the oven. It didn't turn out real well. I didn't get the pocket closed enough and the cheese melted all over the place. We'll have try again on the Egg soon.
