Moe's Smoked Wings.. How do they do it?

I've had them numerous times and I can't tell if they smoke them and then fry them or what..
Anyone have any insight?
*also if you know the recipe to the sauce to dip them in please post!

    As I understand it they smoke them first and then fry them quickly to order. I like to dip them in the white sauce. I think AmazingRibs.com has a recipe for a good white sauce

  • I actually talked to them about it this weekend and got an interesting response.   They smoke the wings as we all know, but they let them sit in the fridge over night and then flash fry the next day to get the skin like that.
    As far as the sauce goes, it's not a true white sauce but a hybrid that is incredible. I can't find that recipe anywhere.

    @ROllTIDEEGGING thanks for the follow up. That is interesting. I guess I'm so new to white sauce, I figured everyone simply added their own twist.

    letting them sit in the fridge to let the smoke taste build up is a good idea, the smoke is quickly lost if you fry too long. ive done my own version of smofried, used mustard to help more smoke to stick. this was a first attempt, adding a lime vinegar garlic mojo sauce to the sauce i used was a great way to add flavor to the white sauce. never had theirs but i always try to improve on dishes, never duplicate =)

    Central BBQ in memphis has wings that are my personal favorite of all time. They smoke until done then freeze them and THEN fry them to crisp em up. Then dry rub them. MMMMMMMMMMMMMMMMMMMMMMMMMMM
