Bachelor Weekend: First Try at Beef Ribs

My wife and Daughter are away this weekend so I thought I'd give Beef Ribs a go for the first time. My wife picked up Chuck Short Ribs at the local this week. These were already pre-cut but still looked good. I used some leftover Oakridge Brisket Rub along with some Crucible Ghost Pepper rub (hey...its just me!)



I set up the Egg with a couple pieces of Oak along with some Mesquite pieces at 250F. 



Since ge it was a free weekend I decided to put on the PGA and go at the Growler of Train of Thought Hoppy Amber we picked up at the New York Beer Project (Lockport, NY). Not a bad way to wait!



The ribs were on 2 1/2 hours uncovered before I threw them in a pan with a little bit of beer (Fat Tire) and Worcestershire. 

When the the temp got to 195 (another 1 hr) on the biggest piece I probed it and it felt done so I pulled them off. 

I took the the juice left in the pan and reduced it to pour over the ribs. I served with Mac'n'Cheese (Cracker Barrel Box kind...sorry). 



These tasted fantastic but I could tell they still had some time on the Egg that could have been added (maybe another 45 min to 1 hr). They weren't tough but not falling apart either. Live and learn right?

It was still a great day/great cook!

  • Looks real tasty... I  did beef ribs long cut the other weekend it finally broke down at 215 on the probe... Looks fantastic making me want to do some more up soon. Job well done.

    Great cook and congrats on the independent operations.
    I find that the key to success with any rib cook is when they probe tender with a toothpick, regardless of the originating species.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.  
  • @milesvdustin - I really like the Crucible Rub.  I put 1 part Crucible to 3 parts Black Ops and it was a good level of spice for me (without being ridiculous).

    @lousubcap - Appreciate the tip and I agree.  Being 'hungry' at the time didn't help the decision making process either.
