Brisky last minute cook

And of course my dad calls and has no plans for his wife's birthday so I step up. Brisky for the step mom coming up. Pretty nervous cause this woman can cook some fantastic restaurant quality food. First time I've cooked for her and they just returned state side after 6 years. My pops took a gig in Abu Dhabi. Anywho, here's the start of the cook. Many finishing and slicing picks if it's worth a damn. Pressures on. Made my injection for juicy reassurance.

I would not crutch but I try to keep it simple. You can dial up the dome temp to around 290-300*F to push it along. Timing-wise you should allow for a couple of hours of FTC if at all possible. IT is up to 163, letting it ride. I think it will probe like buttuh at 190ish and probably not serving till 1pm. Cook temp at grate is 235.Franklin, Tn

Always a good feeling once the brisket gets into the FTC window to the finish-line. Now you have a few options to punch it home when needed. I am jealous of your probing connections with the cow...I refuse to guess as to when the cow will decide to probe like buttah. The friggin cow always wins.

And she's ftc for a few hours. Timed this one pretty good for a late lunch. Roasted garlic mash taters and my wife's green bean casserole will round out the bday lunch nicely. Not to mention the Gigi's cupcakes, mmmmm gigs. My tn people will know what I'm talking about.

Well the scales were rigged in my favor a bit. My grandma, her mil, cooked a miserable brisket last week for her so mine was a breath of fresh air. She loved it and stole my wife's cucumber salad recipe. Great lunch all in all.Franklin, Tn
