Eggplant Lasagna

Started out with the sauce. Ground Turkey, onions, red peppers, shrooms, diced tomatoes, tomato sauce and red wine

While all that was gettin happy I egged the eggplant at 425° raised direct

Made the normal lasagna layers with sauce, eggplant, ricotta, moz and parm. Then on the large at 400° indirect under foil for 1hr then uncovered for 30 mins

And plated up


Mrs3969 said it was possibly the best lasagna she ever had, and she makes a mean lasagna. Definitely on the repeat list.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
