First Cook on the Large - Chicken Enchiladas

Got my large set up and what better way to break it in than a little direct and indirect cooking. 

Grilled some chicken breast with Dizzy Pig Fajita-ish seasoning. 

Found a recipe for enchiladas that called for cream of chicken soup, picante sauce, chili powder, sour cream and shredded cheese. 

Indirect on in the egg at 350.





Tasted better than it looked.

    Most people do ribs or burgers for their first cook.  I think this is the first time I've ever seen chicken enchiladas as a first cook.  Bravo.  You did well.  It's funny to see an egg that is white on the inside with a gray gasket.  Mine hasn't looked like that in a decade.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    Man that looks good!  I love Mexican, my wife doesn't, but she looks Mexican.  Go figure :angry:

    Side note, is your table nest positioned correctly under the egg?

    I'm not sure.  Is there a certain way it's supposed to be?

    I would put a cement paver under the feet, I had my egg set up like yours when I got it and the base cracked (hairline) and I didn't know it until the wood under my feet started burning. I could have been real bad if I wasn't there of if I was doing an overnight.
