Double Smoked Potatoes for dinner

We varied from the recipe a little . . . did not put any salt in the potato mixture.  It didn't need it.  Used green onions, and skipped them in some of the potatoes for our daughter.  Only put smoked paprika on half of them.  Next time I think I'll use extra sharp cheddar, and we will omit the butter and smoked paprika on top. 

Yummy!  Packing a couple in my husband's lunch for tomorrow, along with a salad.  Better than his usual sandwich!

    Thanks for the kind words! 

    Daughter ended up not wanting to wait for the twice baked potatoes, so she had a regular baked potato.  They really were good, and it was nice not to heat up the kitchen baking them.  :)

    looks great, love a twiced baked crunchy potato. if you liked smoked taters try cedar planked mashed, pretty much the only meal i like cedar planked

    Those indeed look great.  I will definitely have to give these another try.  Last time I tried I ended up making mashed potatoes with skins :)

    I have heard that you can cheat and just nuke the taters and then only cook them on the egg for the last step.  I would like to try both ways to see if I can tell a difference. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    That's how we fix our go-to potatoes on the grill.  I take smaller potatoes, scrub & poke them.  Microwave for a few minutes, flip & microwave a few more minutes.  Let them sit for a while so I won't burn my fingers, then I split them lengthwise, coat in olive oil, sprinkle some Chicago Steak seasoning on all sides, and then grill. 

    They're mostly cooked through at that point, so we're just looking to get a little smoke flavor and a little bit of color/char.  Sometimes I think my husband pulls them off a little too soon, but they're still tasty!
