Haven't posted in awhile, wanted to say hello to my fellow eggheads and share today's quick cook.
Marinaded chicken for 3 hrs, stabbed with fork for tenderization. Used a mesquite lime marinade out of a bottle, Lawrys brand.
Veggies are sliced squash, onion, sweet peppers, whole garlic cloves, mushrooms, coated with salt, pepper, and paprika.
Cooked raised indirect to start at 300, took indirect stone off after first fifteen minutes, added chicken and opened up vents to get 400, and some flames for char.
Total cook time 45 mins to plate.
Other notes, bought this chicken by the case at Restaurant Depot, one of the best values I've gotten there, 12 lbs of boneless filets for around 20-30 bucks I think, can't quite remember, but it was a crazy good value. Carry on you wayward sons...and daughters.

It does look good. I will try the marinade you suggested next time I do chicken.
