I used a giant cup cake pan. You'll have to trim the pineapple ring a smidge, but it works.

I have not made it yet but it is sure to be my favorite as i am coco for coconuts or cuckoo for coconuts (not cocoa puffs!). but the coconut cake on the BGE home page by one of my favorite food network celebs is on there- Melissa Cookston. i probably won't be making it for some time but when i do, i'll post picts of it here.
