Pompano recipes anyone & best way to cook them??

Finally, start vacation this afternoon. Going close to clearwater and my wife's uncle says the Pompanos will be running. We won't have an BGE down their unfortunately, just outdoor charcoal, gas and stoves in the kitchenettes. I was asked to do some research on how to prepare them so I figured this would be the only palce to go. Thanks in advance!! I won't be able to check back for awhile.

Pompono is one of my favorites and and I have a couple of suggestions...[p]First, if you are near a place where you can get specialty items at the store, buy some Chimichuri sauce (basically parsley, garlic, and black pepper cured in oil and vinegar). Take the fillets, with the skin on, oil the grill and place skin side down, spreading a good layer of the sauce over the fish and cook until done as desired.[p]A second is to thin slice a bunch of garlic and slow cook it on top of the stove in EVOO until it is fragrent and soft. Spread on the fish as above and cook.[p]This can be done on a grill, under a broiler, or in a hot oven.[p]If you prefer to cook whole fish, make some slashes, down to the bone, about every 1.5".[p]Good luck.

Permits / Pompanos are fantastic grilled and they are easy to fillet. I actually love them nice and simple. Fillet, cut down to size you want, marinate in soy sauce for an hour or so and then just grill them up. This is very mild white meat and you can't go wrong (it is good just plain ole grilled with nothing on it)[p]BTW - Permit fishing is one of my favorites. They are great fighting fish [p]Th
