CI Splayed Chicken

Preheated the egg and CI @ 500 for 1hr then in goes the chicken. Cooked indirect about 4" above felt so I could take advantage of the radiant heat from the done. After 30mins I added some green onion whites, capers and crushed garlic.  It took bout 1:20 to get done 


Plated up with Mrs3969 green beans, fresh maters and the roasted onions and garlic from the pan.  This did not suck!

    Very nice. What differences did you notice cooking in the preheated CI?

     When the bird is splayed and goes in a hot pan the legs seems to cook faster and be more in time with the white meat.   Plus the sizzle of a cold bird going in a 500° pan is just cool and the skin crispness would rival a Lays potato chip.  I usually use this method if I'm wanting something different than grilled chicken.

    I've heard of that method, but have never tried it. The chicken looks almost as good as the green beans and tomatoes!! =) Well cooked green beans trump almost anything!

    I hate it when I go to the kitchen for food and all I find are ingredients!

    and speaking of ramps, i only found them once this year.  such a bummer.

    @SciAggie - much appreciated.  Mrs3969 made it plain and clear we would be eating this as is for leftovers tomorrow night and that I was not to use the chicken for anything like ummm egg rolls or something.  Lol

    @Carolina Q - I agree on the green beans.  I will let her know you approve.  Lol

    I've never seen them around here. I've always subbed green onions. Prolly don't know what I'm missing.

    Looks great Matt ... love that first minute when the chicken is thrown in the hot CI ... my first thought is "Wow, did I do this right?"  Always turns out okay, but sure sounds like it's burning up.
