1st attempt at Salmon on the BGE...

Here are my notes...

Plank preparations:

  • Soak plank(s) in water for 2-4 hours…  Make sure they're fully submerged.
  • Add herbal flavoring to water (optional).

 Fish preparations:

  • Brine filet(s) in a 10% salt water solution for 30-60 minutes.
  • Rinse filet(s) and pat dry with a paper towel.
  • Remove plank(s) from water.  Add a thin layer of coarsely ground sea salt.  Place filet(s) on top of plank(s).  NOTE:  I used a skin-on filet.
  • Apply thin layer of extra virgin olive oil to filet(s).
  • Apply seasoning(s) of choice.  I used Ragin' River (from Dizzy Pig).

Step 1:  Prepare BGE for raised direct cooking at 400 degrees F.

Step 2:  Place plank(s) on grid and cook to desired doneness.  I started with 15 minutes then opted to cook for 5 additional minutes.
