The stars have aligned...

In the past 24 hours I have received the gift of a grass fed ribeye roast from a ranch in Uruguay (Gauchoranch.com), my 7 bottle rub assortment I ordered from Meat Church, and my first ever bag of Rockwood lump I ordered from Firecraft.  Since there is only 2 of us, I'm thinking I should cut the roast into nice, thick steaks.  Any thoughts on which Meat Church rub for my maiden voyage with that brand on a ribeye??  Unfortunately, Mother Nature not cooperating at the moment.  Major thunderstorm right now...hope it blows over soon...I'm anxious to light LBGE and get it on.  I know nothing about Gaucho Ranch Beef...a total experiment.  Keeping my fingers crossed.
