Serrano-Mango Tequila Wings

Experimented tonight with a spinoff on the Jalamango Lime Wings. Gave these a new twist with Serrano Peppers and Tequila. Ingredients were Serrano Peppers, a Mango, Lime Juice, Lime Zest, Pineapple Juice, Cilantro, Tequila, Garlic and Honey. I simmered the sauce for about 10 minutes to cook off the alcohol and thicken, then placed the mixture in the fridge, covered, to cool down and thicken a little more. They turned out great!!! Can't wait to make them again. Nice and Summery.

Thx guys! @Jupiter Jim , I didn't write the dimensions down, but it was something like this:
4 shots of pineapple juice
2 shots of tequila,
1 Lime zested and juiced
Handful of Cilantro
1 Mango
1 clove of Garlic
7 Serrano Chiles
2 TBSP Honey
Combine everything in a food processor and pulse until combined. Simmer on stovetop for about 10 minutes. Then set aside to cool.
Note: Be careful with the peppers! They pack a mean punch. -
Looks awesome. Did you also use the sauce as a marinade? It looks like they have something on them. Wondering how long you had them sit, if at all, before egging.

Thx!! Nope, the sauce was just applied afterwards. Gave the wings a dusting of baking powder for crispiness and also seasoned them with Goya Adobo and Chili Powder. Once they were done, I then added the sauce and immediately served them with a little extra cilantro.KiterTodd said:Looks awesome. Did you also use the sauce as a marinade? Those look good, but I might have just ditched the wings poured the sauce over some ice.
