Red Meat - Cowboy Ribeyes and SRF Strip Steak

Man, these were awesome. As good as they Cowboys's were, no choice between then those and the SRF's strip. All good melted onions and and roasted potatoes.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Your steaks look great. Are you saying that the SRF strip was better than the Cowboy rib eyes? We're the rib eyes prime?
Any road will take you there if you don't know where you're going.

yes and yes @Hawg Fan I purchased the SRF whole striploin and cut it into steaks. The Cowboys came from Pat Lafrieda and they are prime black angus.

Got the SRF on sale for $325 so it came to around $25 per steak. That was why I pulled the trigger.

reverse seared using the Egg for the roasting and then to the kettle for searing.
