Before the Pens decided to blow the game, I decided to go with a family favorite, Ribs and Mac n Cheese! Came out perfect for our/my liking!

As for the Spares, contrary I believe to many, I just throw them on indirect 275 (no basting, no wrapping, etc). For these ones, I sauced them somewhere around the 4-4:15 mark, and then they cooked another 45 minutes or so. Start to finish somewhere right around 5 hours. Then, slice/serve!
Worth noting the rub we prefer has a bit of a sneaky heat to it, so I do glaze them with a bit of honey to balance that, and then sauce (it may look like a lot of sauce, but it really isn't). -

Sure, per the summary above no big process really. I rub them up with rub of choice (rub we use has a little heat on the back but adjust to what you like). 275 indirect, and I check them starting around the 4 hour mark where they're usually ready for a glaze. I paint some honey on (if your rub doesn't have pop you may want to leave this part out), then paint with sauce of choice.
