Steak Sauce Ideas

I cook every steak the same way (S&P and either reverse sear or normal).
Central Market had a sale a while back on NY Strip and the wife and I bought a couple of weekends worth. I am wondering if anyone has anyone has sauce ideas or steak toppings that I should try. I have made a couple of chimichurri recipes and a mushroom Marsala in the past. Thinking of a Steak Oscar flare but am open to any ideas you may have.

this was crying tiger with tritip, it works well with strip and ribeye. you wont taste the fish sauce in the steak marinade

marinade: says 1-4 hours
2 tbls soy
1 tbls fish sauce
1 tsp sugar
some chopped green onion
roasted tomato chili sauce:
6 thai chilis
1/2 cup chopped onion
1/2 cup fish sauce
3 cloves garlic
16 cherry tomatoes
1/3 cup lime juice
4 tbls sugar
2 tabls pakak hot curry
bunch of chopped green onions
when the egg got up to about 500, put the chilis in and roasted til they were starting to char but not black,maybe a minute, took them out and added onion and whole tomatoes and did the same thing. let egg climb up for searing temps while back inside tossed some garlic into a dry pan for a half minute on med, added the pakak paste (this paste needs to be cooked according to the label) added a little water to avoid burning, then everything into a food processer. allow to cool, go cook steak

What do you use for sides to soak up all that goodness?

you could probably put it on a bed of greens and serve it that way. i like to roll it up in flour tortillas. the curry sauce is not needed, something i just add

I have had his. What makes it Kentucky is the borbone mixed with the A1. I guess that is what you call a complex sauce in Kentucky....no offense to others associated with the state.tarheelmatt said:

Probably too simple for most of you, but I have become a real fan of Lea & Perrins steak sauce. Always loved the Worcestershire sauce, and their steak sauce is a lot like it.

sorry - NO offense meant - but I prefer a good tasty, dry aged steak with a smidgen of salt to stand up proud and deliver it's own tasty goodness rather than masking it with whatever - but to each his own!Re-gasketing the USA one yard at a time

It's a very low brow sauce, But I sometime's enjoy Country Bob's steak sauce.
It's a little sweet and can really pickup a marginal quality steak.
Now, I wouldn't consider using it on a good quality steak.
