Wife and daughter gone on a Girl Scout trip today. So I had all day to mess around the house and egg. Did a pork butt for dinner tonight while I watch the Blues game. Plus I made a chuck roast for the first time. I plan on using it to make enchillads later this week. I'm looking for a good recipe I could do on the egg with the beef. I have one but I'm not thrilled with how it looks Thank you

This is the recipe I use for sauce. I also tend to like corn tortillas. Fill it with your meat and whatever else you want. Top with queso fresco and the sauce.
