What to cook for daughter with allergies?
E-ville Egg
Posts: 100
These past two weeks have been pretty stressful. Two Tuesday's ago we rushed our 10 month old daughter to the ER due to her vomiting up phlegm and blood and a 105.4 temperature. After two days in the pediatric unit the doctors weren't really able to give us an answer about what may have caused this. They said possible UTI and virus. Our pediatrician said UTI and gastroenteritis. DRs were unable to grow anything on her urine sample so they couldn't be 100% positive on anything.
We we decided to get her tested for allergies since we know she has an egg sensitivity. Her results came back that she's allergic to Egg, gluten, molds, yeast, strawberries, chicken, and a few other things. The day she went to the hospital she had strawberries and breast milk. We had also played outside for quite a while that day. The Dr that did the testing said the rxn was most likely due to her being exposed to a large helping of all of these allergens. She told us that she will more than likely either completely grow out of these allergies or become less sensitive as she gets older. She also told my wife that if she were going to continue breast feeding that she should eliminate eggs, gluten, yeasts, and strawberries and cut back on eating chicken from her diet. My wife also doesn't like pork or fish.
What at the hell do I cook for her now? Its basically a veggies, meat, and beans diet. Any ideas would be greatly appreciated.

I am sorry for your little girl, but it is good to know what your dealing with. In many ways it will become just part of your lives and routine.
My 20 year old son is allergic to eggs. He started having issues in elementary school. We feel pretty dense now for how long it took for us to figure out the problem and get medical confirmation.
He knows what he can't eat. The problems have come when eating out or at an event. Sometimes people put egg in things you don't expect. At 17 he was at an event that was serving homemade ice cream. He had always been able to eat my ice cream because I have always made it with half and half. He took 5 or 6 bites before he started having a reaction. Parametrics were called, but benadryl calmed the reaction enough that they didn't trasport him. A couple weeks ago while eating at a place in Nashville, we noticed he had stopped eating after finishing half his burger. WHO PUTS EGG IN BURGER! Point is be careful eating out.
Your combination of egg, gluten and yeast will be more challenging. Obviously beef and veggies will be the core. Search recipes for variety. Also, search "bread" options that substitute non gluten grains. Probably going to be flat breads.
I will keep this thread in mind if I find anything that might help.Lawrenceville, GA -
King Arthur Flour's website is a good source of info. Search egg replacers and gluten free.Lawrenceville, GA

I would probably suggest speaking to your physician and finding a good nutritionist as opposed to seeking the advice of a bunch of people who own the same cooking device.
While there are some very well-intentioned folks on here, we may not be the best role models for healthy eating...and I'm not 100% sure, but would wager that most are not trained nutritionists. -
Lamb and goat meat can be substituted for meat. I know I was on a lamb, goat meat and milk from 3 years old to almost 5.

E-ville, sorry to hear about your daughter's allergies. Our 2 year old son is allergic to eggs, soy, mustard, seeds, peanuts and tree nuts. I have a ton of information if you'd like to reach out to me privately. FARE (food allergy.org is an excellent source of information. As for food to cook this is where we get creative, like burgers wrapped in lettuce, lots of veggies, any of the many cuts of beef. Desserts like banana bread are favorites here. There are parent groups that can help identify restaurants in your area, also allergyeats.com has info.

In n Out actually has a secret menu item with burgers wrapped in lettuce, protein style, so I have tried that and it is actually pretty good. You can do fish, shellfish, shrimp etc.
I am sure your diet will evolve to protecting her, none of my children have any allergies so I have no websites personally, but you got this. -
My wife has a gluten allergies and has had trouble for years trying to figure out what makes her feel better. Recently we both have made the change to keep grains out of our diets and other things that I thought I couldn't live without. We have been eating very Paleo-like but have recently read a book called Keto-clarity which encourages eating higher fat, moderate protein and low carb lifestyle with all natural foods. The freeing thing about this is that a lot of the foods that we have been told not to eat for decades like red meats, pork, fatty oils, real butter, etc. We have been eating like this never felt better and eating amazing food. Sometimes we just have to be more creative, like using cauliflower crust for Pizza, cauliflower Mac and cheese, cauliflower rice, all taste great by the way.
Today im smoking ribs and have no guilt about eating as much as I want till full. Allergies can make things very difficult on everyone but hopefully with the family joining in and being creative everyone can have fun with it. -
Yeah, definitely talk w. a nutritionist. Seems like a lot of problem foods. Might be interesting to find what in the eggs triggers the reaction. Also, do they mean avoid items that were made w. yeast, i.e. any leavened bread? Not to mentioned anything w. wheat.
FWIW, recent studies indicate that about 1/3 of what we eat is actually digested by gut microbes. The reason little children have problems w. a lot of things is they haven't picked up the bacteria necessary to break down the foods older kids and adults can happily eat. Perhaps add some yogurt or keffir to the diet.
Here's a few ideas. For quick and easy, my wife and I do something we call "chip and dip." Corn chips, used to scoop up a mixture of cottage cheese and mashed avocado, with a topping of finely shredded greens or sprouts. Sometimes for gatherings we make a "super salad" A big bowl of mixed greens, w. many small bowls of anything that might also be tossed in. Nuts, grated cheese, salad shrimp, pepperoni slices. Etc. This allows people to pick and choose for themselves, and it doesn't take much time for anyone.
Bowls of rice, boiled, baked or fried. Buckwheat. Quinoa and millet salads.

Beef. It's what's for dinner. I see a lot of beef in your future as it appears to satisfy the perameters of the problem given.Flint, Michigan

for egging, might consider a wok. with a billion plus people growing up on them, my guess plenty of recipes to keep it refreshing........
registered dietitian is also a good connection to make.

I know you said your wife doesn't like pork, but how about if it is ground in sausage? How about turkey for your daughters allergies? I totally agree with the 'check with a dietician/medical professional' advice, but I would think learning to make your own sausage might be a good approach once you get your safe ingredients sorted out. You would have full control of the ingredients and could make a pretty wide variety of things with combos of different ground meats (beef, bison, lamb, turkey) and incorporating vegetables, beans, rice, etc. Endless combinations and it wouldn't all have to be link sausage, you could easily make meatloaf with those ingredients if you stay away from egg as a binder, use non-gluten breadcrumbs (people here have posted using crushed pork rinds or panko), etc.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Thanks everyone! We have spoken with a nutritionist, have one in the family, and she suggested very basic foods, i.e. Meat, vegetables, fruits, beans, Etc. our daughter has had reflux since she was born so her allergies are more than likely caused from leaky gut. We were also given advise on how to help her pyloric valve open and shut properly which would help with the reflux.
