Got this idea/recipe from @Thatgrimguy, so I cannot take credit.4Runner said:Great. More info on the SV potatoes please. I'd like to give it a try.
Wash and peel potatoes. I used half red and half russet. Maybe used 6-8 potatoes.
Put those in a gallon ziplock bag with cup of heavy cream and 2 sticks of butter. Add some salt and pepper too.
Sous Vide was set for 185°.
I cooked for about 4-5 hours. Mashed some of them, and placed back in for another hour.
Remove from bag and mash as you wish. We left ours a little lumpy and rustic.

Wow looked great. I did a prime rib this weekend but wasn't happy with the amount of meat to fat ratio. I keep looking at this forum at pic of the raw meat to see if I need to be pickier with what the grocery store give me. And your bread looked fine to me!AEgger; griller of the house in NC; lg and sm egg

Thanks man! This meat wasn't anything special, just choice from Shuler meats in Thomasville. The fat doesn't bother me, it's flavor. I'll just cut around the big chunks. There were some fatty parts in this too.
