3 Food Questions
First, what does the term "mojo" mean when referring to food. I see Mojo Pork, Mojo Fajitas, etc. Does mojo mean a specific taste or spice?[p]Second, speaking about Fajitas, does anyone have a good marinade to use? I'm looking for something that 8 and 14 year old kids will like. Also, what meat do you use, top round?[p]Third, does anyone have a good recipoe for Fried Rice. Again, something that 8 and 14 year olds will like.[p]Thanks,

Howard,[p] Mojo is just a term that means it's "Good Eats"[p] As for the fried rice: [p]1 cup of rice rinsed and cooked per directions. Don't overcook the rice..[p]Cube up two or three boneless, skinless chicken breast.[p]In a Wok. Heat up a small amount of peanut oil.
Slice several slices of fresh ginger, and garlic into the hot oil and let saute'[p]Add chicken to hot mixture.. Cook till done.
Remove chicken..[p]Add more oil, crack one large egg into Wok and scramble. Set aside[p]Reheat more oil, add garlic and ginger.
Add rice and heat up. Rice should be loose.
Add Chicken and stir. cook for couple minutes
Add egg and stir..[p][Optional] Sprinkle on some Sesame Oil and stir.[p]Add sliced Green Onion or Scallions stir.[p]Serve with a sprinkle of sesame seeds and some sliced green onions on top.[p][p]

Celtic Wolf,[p]Hey thanks for your help. Never knew mojo has no specific flavor associated with it. Regarding the fried rise, just curious, do you use any soy sauce or black bean sauce to give it that dark color or will it develop as I cook?[p]Howard

Howard,[p]I may be way off but I thought mojo was a citrus based Cuban sauce and marinade that is perfect for fajitas. I could be thinking of something else...try google.[p]Dixieland Delights

Howard,[p]We like Jardines fajita marinade on our fajita meat. You can get 3 or 4 cooks out of a bottle unless you're doing a lot. It would be great for the kids as well.[p]We have used round steak, skirt steak and sirloin tip as meat. Chicken works as well but we like the beef.

You can find MOJO CRIOLLO at any major grocery store.It was a little hard to find at one time,had to go Latin grocery stores to find it.Food Lion Giant Food,Super Fresh all carry it.It is a great marinade for chicken,pork or beef.

Celtic Wolf,[p]Kylie Kwong, who is Australia's leading Chinese food chef, says that her family has always used Maggi Original Seasoning in fried rice. I've become a convert - it is a bit less salty than soy and gives a nice 'meaty' background flavour.

Ummm...mojo is a cuban flavoring using garlic, olive oil and sour oranges.

Easy Enchilada Sauce
3 tablespoon(s) Oil
1 tablespoon Flour
1/4 cup Chili powder
2 cup(s) Chicken stock
10 ounce(s) Tomato paste
1 teaspoon Oregano, dried
1 teaspoon Cumin powder
1/2 teaspoon Salt
PREPARATION:
Heat oil and add flour. Stir until smooth and cook for at least 1 minute.
Add chili powder and cook for another 30 seconds.
Add remaining ingredients and stir well to combine.
Boil and thenrreduce heat to simmer and cook for 15 minutes.
This sauce will thicken and smooth. -
