Grilled Vegitables

Haven't shown this in a long time.  Veggies for the week.  One of my favorite BGE stories is my younger daughter telling me that she reheated some of the Egged veggies at work, and people came around asking who had BBQ.

The lunch is BGE sweet pork chops with the veggies.  200 calories.

    I have been trying to eat more vegetables. I was never a fan growing up but middle age is catching up on me, yours look fantastic, can you please elaborate as to what veggies, temp, and how long? It would be greatly appreciated. Thanks for your time.

    I like (most) vegetables every bit as much as protein. Sometimes, I'll have a meal with nothing but veggies. Your cook looks great! With or without the chops.

    Here's one for you... Make a batch of Lidia Bastianich's marinara. Then. cut some zucchini into 1/4"+ rounds. Sauté the zucchini in a little olive oil until browned on one side, then flip them over and while the other side is browning, spoon some of the marinara over them. Awesome side dish or great by itself! The marinara also makes a great pizza sauce and is excellent on pasta too. I also freeze it in one cup containers for future use.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    These are red and white onions, baby carrots, zucchini,  and red cabbage.  Generally speaking veggies take longer to cook than you would think, but for these baskets we just want them a little soft and smoked.  Cook them too hard and they are mushy, and besides we will microwave them hot for meals during the week.  Once cut I toss them with PAM and salt.  I cook them direct about 15 minutes at 350 to 400  spraying them with PAM and tossing them every 5 minutes.  Don't over do them, you want them a little soft and warm but no more.
