SRF Cap of Ribeye

Pulled the trigger on a Cap of Ribeye and cooked this wonderful cut of Kobe beef the other night. Opened a nice bottle of Vino to go along with this gem and for the hour or so that I sat and savored every bite, I kept telling myself this was the best tasting piece of meat I have ever had.  I was extremely skeptical of paying so much, but it was 100% worth it.  I vowed to myself, I will have a SRF Cap of Ribeye at least once a year.

Beautiful Cut of Meat!


Beautiful Spring night to fire up the EGG! 



Seared at 600 degrees for two and a half minutes a side.



Pulled and let sit for 10 minutes.



Final product




Undoubtably the best cut of meat I have ever tasted.  The meat was extremely tender, had a buttery richness, and every bite seemed to be better than the last.  This is definitely going to happen again!

    Wow!  Beautiful steak and a beautiful view!  jealous!  I've had the filet and ribeye from SRF, and I now know what my next purchase will be.

    @CodyA88  I am telling you, MAKE IT HAPPEN.  If you think the filet and rib-eye were good, this will blow you out of the water.

  • That's great to know.  Mine arrived the other day and I have to say I was a bit underwhelmed by it's size given what I paid for it, even on sale.  It's in the freezer awaiting the "right" occasion to cook it up.  Glad to hear I'm in for a treat . . . and that size isn't necessarily everything.   =)

    @Crystal79 you are in for a treat.  It was my first Ribeye Cap and the first bite was unlike anything I have ever tasted.  Hope you enjoy it as much as I did.

    I really need to find a source for this cut up here in Canada. Haven't been able to get my hands on one yet... one day.

    So - I went to this dinner last week: Tuffy Stone at the James Beard House 

    Naturally, everything was awesome (especially the brisket).  But the biggest hit of the entire night was an appetizer - Tuffy did our SRF Cap of Ribeye seared with brown butter, candied bacon and a balsamic reduction.  Thought I'd died and gone to heaven.

    Any chance these will join the sale this week?  I ordered a bunch of steaks this morning - mad at myself for not pulling the trigger yesterday and missing some great cuts.....

    They will, but there will be VERY FEW available.  We had hoped to have a load of them arrive before this sale, but they're not coming until next week.  Literally only have 20 units of the SRF caps and 60 units of the DRR cap.  I'll be putting them up on the sale at about 10PM MST tonight (somewhere around there).  I know it's not ideal with the limited quantities and iffy timing, that's just how it worked out with this product.

    I went back and forth regarding the reverse sear and settled on a quick high temp cook.  I will give a reverse sear a go next time.  That dinner sounds and looks amazing.  What I wouldn't pay to sample that menu!

    @bweekes It took some cajoling and educating with an early miss, but I now regularly get full caps of ribeye from a tiny but excellent butcher called Nemo's on Mt. Pleasant in Toronto.  If you call early (about a week) and ask for Katarina and tell her what you want, you'll get it. Great meat too and is now my go-to steak.

    @SRFShane I made my purchase around Thanksgiving last year when you guys had a huge bundled sale.  Do you think that will happen again this year?

    I think you're talking about Cyber Monday last year - yeah, we'll definitely be doing something then, I'm just not sure what products are going to be involved yet.

    @NorthPilot06 it was a solid meal!  I honestly could have paired any bottle of wine with that cut of meat and it would have tasted outstanding!
