Those look great.
I would have thought that it would be difficult to hold the temp well enough to do frying, but it looks like your fry temp is perfect.

Thx Greg! Not hard at all with the help of a handy thermapen. I initially take the oil to 370ish, then throw the first batch in. It'll cool about 50 or so degrees once you add the chops. The oil will heat itself back up quickly though as long as you keep good airflow through the bottom damper. The mini makes for a perfect fry daddy.GregW said:Those look great.

Nice! That's the way a pork chop should be cooked. Served with a side of country gravy. I only get to eat those when the wife is out of town. So as not to waste the oil I follow that up with buttermilk fried chicken and finish the week with fried jumbo key west pink shrimp.Narcoossee, FL

Braver than me. I have set my wok oil on fire, I don't want more than a few spoon fulls of oil. Great looking cook.

Dip the chops in a flour dredge, then an egg wash, then in a panko/flour dredge. Refrigerate while the oil is coming up to temp, then fry at 350-375 ish on both sides until golden brown.DMW said:Those look awesome. I can't remember the last time I had double breaded chop like that! Lots of S&P, hard to beat.
