Neighbor has one that he wants me to smoke for him Looking for tips on what to do with it...I do have an Anova but haven't used it much....

Best to sharpen your knives. Wild turkeys fly so get a LOT of exercise. Last one we had you couldn't cut with a chainsaw.

Brine is the way to go.
I generally hammer it thin - it's pretty thin already - and then make a roll out of it. Little bacon or sausage, little cream cheese, some sliced jalapeños, tots might might be good...
