Just follow the instructions....hahah ahhhhh j/k. smoke at 250 for about 5 to 6 hours. Should probe like soft butter. I spritz mine with apple juice every hour or so the bark doesn't get too crispy. I season with just salt and coarse pepper. good luckSt. Johns County, Florida

I did a rack this weekend. Cooked it for 8-9 hours at 265 in my MM and also spritz with apple juice after 5 hours (every 30 min). I put equal amounts of salt and pepper on it. It was a hit.

Turbo Beef RibsIndirect 350. Pull membrane, Rub-mustard-rub, cherry wood. Used coffee rub.

Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
Those are beef back ribs-as @MaC122 says, go til you can probe the meatiest part with no resistance (toothpick test). Spritz or not (I don't) and a few of the above are short rib cooks-a whole different animal (or cut from the cow).
Just don't go too long as once they are there-they can go south quickly. Great eats await-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
^^^^ +1 with the Cap. Way shorter cook than the Chuck ribs posted above.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

i have been off my game for the last few weeks. Getting married and school really put a dent in my meat spending budget and cooking time lol -
biggest trick with back ribs is finding them with a good amount of meat. 250 til tender, if cooked to fast they can be a little greasy

fukahwee maineyou can lead a fish to water but you can not make him drink it
