I thought this might be helpful info. I buy the foil grilling trays from Walmart they fit perfectly into the standard foil pans you get at Costco/Sams.. Its a great set up for indirects when you are using your standard place setter. You will see I create a little stability with the scrunched up foil balls.

1lb Neese sage sausage
1 can Spam reduced sodium
2 eggs
1/2 onion
1/2 pepper
A good dose of hot sauce
2 table spoons pimento jalapeños cheese
Salt and pepper
1 pkt bacon.
I mixed all the ingredients except the spam and bacon. I sliced the spam and layered it throughout the sausage mix. Added bacon in a weave to hold everything together..
