Smoked brisket eggs Benedict idea

This is my latest brainstorm.  I've had fried oyster eggs Benedict before: muffin/eggs/fried oysters/Hollandaise (in that order in the presentation from plate up).

Having recently tasted smoked brisket BBQ nachos while on a trip, it occurs to me that brisket can be an ingredient and doesn't need to be a stand-alone entree.  Therefore, this comes to mind:

Eggs Benedict constructed as:  muffin/eggs/smoked brisket/Hollandaise (maybe with some smoked jalapeno pepper in the Hollandaise).

Smoking the brisket now for dinner as I type.  Leftovers will be deployed for the aforementioned experiment in two weeks (I'll use the freezer, obviously)...

More to follow when she's finished..

Anyone already done this??

Eric

PS - Dill seed is a great addition to wet rubs, IMO.  You can see some in the picture, which came from last year's garden in the fall..
