Compac Duroc Spare Ribs

Working from home today, just about to load up this rack of ribs that have been resting in the fridge for 1.5 hrs.
Plan is to low and slow at 225 grate temp until ready. May spritz after 1.5 hrs with Apple Juice/Cider Vinger, no wrapping.

Do you mean Compart ribs? I have cooked those but never heard of Compac.

I've met one of the owners at Compart's. Great people and a passion for the way they breed. Ribs are 2nd to none. Glad to have their farm nearby.Large, Medium, Mini, and Mini Max, a few too many accessories, 2 kids, 1 dog, and original wife. Lover of winter, powdery snow, and lots of golf.

Here is the finished product. They took about 6 hrs. Used Smokin Guns Sweet Heat and Hot rubs. Glazed with Butcher BBQ Sauce the last 20 minutes.
