Spatchcock Chicken temp

Help...it's on the BGE right now. I have the temp probe in the breast. Do I take it to 165 in the breast? Will the thighs be done? Or 180 in the thigh,,,I want to avoid overcooking the breast

165 in the breast will do. The thighs will be fine too. Might pull the chicken off the cooker a little bit before 165 since it will still cook a bit after you take it off. Let it cool before carving. Use this guide for carving: The Butcher Carves a Turkey - Video - NYTimes.com
Here's a picture from yesterday's Salado Eggfest. That's my spatchcocked chicken. Skin came off the breast a bit but the chicken came out great.

Point the legs toward the back of the egg (it's hotter there). Cook breasts to 160-165°, thighs to 175-180°. Enjoy.
I hate it when I go to the kitchen for food and all I find are ingredients!

This was a fun method. .noticed I put the one leg a little too far back. Corrected that. ..sure smells good. Getting ready to carve!
