For starters, I would never have thought to do this without this forum. At $1 per pound for whole birds right now...this is going to be a regular cook. So many thanks to all those that share.
My first attempt was a couple of months ago and was cooked at too low of a temp to get the crisp, darker skin that many of you achieve . Last night was #2 and had much better results. Used a peach bbq rub and cooked raised direct at 375 for 50 -55 mins. I'll probably bump the temp up with future cooks to find my go to...

Yeah, had never heard of spatch'd before Egging. Had heard of butterflied, but didn't know anyone who had done that.
Great technique.
I've read, and found it true, that skin crisps best at 450F dome. I flip at the end, for maybe 10 minutes, just to be sure. Sometimes it chars, but 'd rather have that than rubbery.

If you can air-dry in the fridge overnight, that goes along way. And lightly dust with corn-starch before hitting the BGE will also aid in the crisp skin department. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

on the other end of the spectrum.... i find skin crisps really well when going low and slow too. 225 for four five hours
helps in all cases if you can dry it in the fridge overnight or a few hours at least

Did 2 the other day, one with skin and one without skin. I think I am now going without skin from now on out. Way more flavor penetration, and sometimes the skin can gross me or someone I am serving out, even if it's crispy.
