Use Wood Chips with Pizza?

What is the normal practice for using wood chips when cooking pizza:
normally do, normally don't, never do?

    I don't. Let the lump burn till it's clean with no smoke. But that's just me.

    I'd say its more than you. The wood fired taste that you get is not from adding a lot of smoke. A clean fire is more than enough. When I do chicken pizzas I use chips when cooking the chicken but the pizzas are done on a clean fire.

    Absolutely!! I love smoke and when I do a pizza, I toss in a healthy hand of hickory chips just before the pie. Turns out fantastic.[p]TNW

  • The Naked Whiz, I didn't use any this time (just finished eating), but will next time. I had wood flavor in quesadillas the other day and thought it was great. Thanks to you and the others for the replies. Here again, the differing answers show that there is no standard way of doing things. Some like it one way and some the other. Good cooking to all.
