Pork Tenderloin Stuffed

Butterflied and pounded out a pork tenderloin and threw in whatever sounded good from the fridge. Cheese, pepper, onion, garlic, spices. Sprinkled a little meat glue, rolled it, and rubbed the outside with some MC Honey Hog. Cooked the pork log raised direct on the large with some orange wood until 140. The MiniMax cooked some brussel sprouts with a mustard glaze. Not bad.

Some banana bread beer to wash it down.

Looks great! What's your thoughts on the banana bread beer?

    Thanks!
The banana bread beer probably isn't for everyone, but I love the stuff. It's not something I'd drink more than one at a time though. Tastes a lot like banana bread believe it or not.

Thanks for the explanation. I'll have to give it a try if it's regional

Looks Great! How did you hold that loin together? I never can seem to get it rolled just right and the stuffings, especially the cheese, escapes the inside and drips out. No butcher's twine or toothpicks are visible.

Thanks, MIck. I used a little meat glue to hold it together. It does a pretty good job, and a really works great if you can roll up your meat, wrap it, and let it sit overnight. My rolled pork didn't sit for very long before going on the egg, but it still got the job done. Purchased from Amazon.

Great job, looks yummy.  You did better then I ever have of flatting one out.  I have heard both good and bad about meat glue.  Some say it is not good for you and others swear by it.  A lot of the big chains I believe use it and never tasted any difference.  Does it have any taste?  I see you put up what looks like a beef version, is there one for pork specific?

I've used it probably a dozen times with beef, turkey, pork, and chicken and detected no off-taste at all on any cook. Usually I've used it for more complicated cooks than this, but just decided to use it last night instead of messing with toothpicks or twine. Everything I've read indicates that it's safe also, but don't take my dopey word for it.
There is no specific version for one meat or another. The brand that I linked to on Amazon just happens to be called Moo Gloo and uses a cow on their labels. There are other brands and places to purchase.
