Wok for the XL

I've been doing some research on Wok's and was wondering if 20 inches is the way to go?

    I got the 19" from Ceramic Grill Store. It fits well on the egg with the spider/woo. But, man, that thing is HUGE. I cook on it for my family of 5, and it is plenty big. In fact, I think it's a little too big. It won't fit in any of our cabinets without moving a bunch of my wife's cooking stuff out, and apparently that's not an option. I kinda wish I had gone with the 16". It still fits on the spider for the XL. I noticed the woks on CGS are a little cheaper than the ones at the Wokshop, FWIW.

    With the 16" would you have issues with flare ups getting burnt?

    I can't speak for the XL but I do a fair amount of stir fry on my large with a 16" wok.  I get flare ups but you want some really good heat to stir fry correctly.  Low heat is just sautéing and not the same taste.   If your getting a wok go ahead and get a good set of gloves.

    You will probably get a little more flare up, but that's part of the fun. =) In all seriousness, though, Matt is completely correct. I don't use nearly all the "capacity" of my wok. If I dumped enough food in there to fill it up, it would drop the temp to the point where it's not stir frying any more, just sautéing. With a good pair of gloves and a long spatula, flare ups won't really be an issue.

    Funny you started this tonight.  I went to a restaurant supply store tonight to get a wok.  I also have an xl and was eyeing up an 18"

    Unfortunately I passed because they only had 18 gage steel which felt too light to me.

    From what I am reading, you should get 14 gage, is that correct?
